Christmas morning breakfast

A glimpse into my world down here...

Hello again everyone and welcome to day 7 of Blogmas! So far going well, it has taken a few mornings getting up at five to finish off a post before work, but so far we have reached one whole week of consecutive posts.

For those of you who don't know this Christmas will be my first as a vegan, I have been a vegetarian since I was ten so it won't be a huge issue but there have been a few things that I have had to alter a little.

One of which being my traditional Christmas breakfast. The boy and I don't have many Christmas traditions, but one that we do have is that Christmas day breakfast the boy makes me chocolate chip pancakes.

Desperate to keep this tradition I have been taste testing a few recipes and I think that I have finally found one that I will be using this year. And as it is Blogmas I decided that I would share it with you.

So you will need

1 cup plain flour

1 cup plain flour

1 tbsp sugar

1 tbsp sugar

2 tsp baking powder

2 tsp baking powder

A pinch of salt

2 tbsp vegetable oil

2 tbsp vegetable oil

1 cup almond milk

1 cup of almond milk

Chocolate chips

A packet of dark chocolate chips (or dairy free)

The method is really easy, just pop everything in a big mixing bowl and stir. Heat a pan and use a little extra oil to prepare the pan.

I like the little pancakes that are a little fatter than normal, so pour a little batter into the pan. Remember that the first pancake is usually a little bit worse for wear so don't worry.

Finally stack up your pancakes nice and tall, grab a fork and enjoy!
